Allow for filter_updated parameters to point to fields in the person schema

The current grouping as of (v23) for

filter_updated

parameters is limiting and should instead allow the user to specify the field in the schema that checks for an update.

The reason for this is two fold:

Having the parameters grouped requires the user to reference PDL documentation to understand which field fits in which group making setting the parameters inefficient
Having
mobile_phone
in the
phone_numbers
group would charge a user if a non-mobile number updated when they may care about mobile-only
